The Macaron d’Amiens is a specialty of Amiens in northern France, with roots traditionally traced to the arrival of almond confections in France from Italy. Unlike the colorful, filled Parisian macarons we are familiar with, the Amiens macaron is a single, rustic almond biscuit—soft, dense, and wonderfully chewy, with a deep almond flavor profile.

Our Food Network winning Belle Macaron brings the rustic Amiens tradition into the Lady Belle creation. Inspired by the moist, almond-rich character of the Amiens macaron, the Belle is our expression of a French almond biscuit through a Southern lens—simple in spirit, generous in multiple flavors, and distinctly Lady Belle.

Parisian Macarons

The Parisian macaron is the elegant, two-shell sandwich most often associated with French pâtisserie today. By the 19th century, filled macarons had emerged in Paris, pairing delicate almond-meringue shells with fillings such as ganache, buttercream, or preserves. Parisian pastry houses later refined and popularized this format, transforming the macaron into one of France's most recognizable confections.

Our Parisian macarons honors that classic French form while giving it a decidedly Southern point of view. Nancy Macarons
Nancy, France
The Nancy Macaron is one of France's most distinctive regional macaron traditions. Its history is associated with two Benedictine sisters who left their convent during the French Revolution, began selling the almond biscuits they learned to make. By 1793, their macarons had become so beloved that the sisters became known as the “Sœurs Macarons.”
The traditional Nancy macaron is a single, naturally colored almond biscuit, crisp or lightly cracked on the outside and tender inside, with a pronounced toasted-almond flavor. The traditional recipe is simple—the technique itself providing much of its distinctive character.

Our Nancy takes inspiration from this historic almond macaron and adds a Lady Belle signature: a luscious nut filling tucked within the almond-rich biscuit. It preserves the spirit of Nancy—the rustic beauty, pronounced nuttiness, and tender center—while giving the traditional form a richer, more indulgent finish....
